These are the 90 best restaurants in California, according to Michelin

(Bloomberg) – The balance of power in California’s restaurant world swings south, according to Michelin.

On September 28, the second edition of the guide for the Golden State listed 90 Michelin-starred restaurants, the same number that made the inaugural list in 2019, although the Bay Area, which previously led the state with 57 seats. , has seen a significant number of places. drop off the list. This success has been most evident in San Francisco, which has seen 13 of its 30 one-star restaurants drop from the list, mainly due to closures. California restaurants have been hit hard since March 2020, with around one-third of closings, and two-thirds of workers have lost their jobs, at least temporarily, due to the pandemic.

Among the one-star places in San Francisco that lost their designation were Luce in SoMa and the now-closed Michael Mina in the Financial District. One of the more notable drops on the list was Thomas Keller Bouchon restaurant in Napa Valley, which remains open, as well as Baumé, in Palo Alto, which has lost its two stars even though it still offers take-out. .

The Michelin chief inspector, who spoke on condition of anonymity, declined to give reasons why specific places have lost their rankings, but said: “Removing a star is an extremely difficult decision confirmed by several visits by inspectors over time, as rewards are evaluated on an annual basis. “

Earlier in the year, the guide was more generous on keeping the stars in place for dining rooms that had temporarily closed or had successfully rotated due to the pandemic. Among the qualities assessed by Michelin inspectors, there is, she says, “the consistency between the visits to decide the distinction of a restaurant. Our inspection criteria remain unchanged, as restaurants are assessed on an annual basis. “

Los Angeles, meanwhile, has five new one-star restaurants and two new two-star dining rooms, which offer “great food, worth the trip.” Hayato, the downtown seven-seater kaiseki spot, joins Melisse in Santa Monica and Addison in San Diego to bring the state’s two-star total to 16, and focus more on Southern California.

As in years past, a convenient way to get Michelin’s attention is to put the sushi in the spotlight. Of the 22 new stars (“a very good restaurant in its category”), four have the word “sushi” in their name.

Mattia Agazzi, who creates dishes like Camouflaged Pizza Risotto at Gucci Osteria da Massimo Bottura in LA, learned of her One Star victory during a phone call with her mentor Massimo Bottura, who has three stars at her Osteria restaurant. Francescana in Modena, Italy.

“It’s very important, especially after a year when we had to open and close,” Agazzi explains of Michelin’s impact on the business. “When we have had stars in the past, it has always helped. (The place debuted just before the closures in March 2020.)

Jil Hales, owner of Barndiva in Sonoma, another star-studded new place, highlighted the ongoing stress the restaurant industry is under. “While we appreciate so much the attention this recognition will bring, we are in the same predicament as most of the industry,” she said. “We really hope that this will allow us to develop our team, so that we can meet the demand.”

Six restaurants were awarded three stars (“exceptional cuisine, worth a special trip”) including the exquisite Atelier Crenn by Dominique Crenn and the French Laundry, which played a role in the recall election of Governor Gavin Newsom when there. had dinner in the middle of a November 2020 lockdown. The only place to fall from the next level was Meadowood’s restaurant which was destroyed in the glass fire. (It has since reopened as the fast, casual restaurant Loveski.)

For small budgets, Michelin announced its California Bib Gourmands for 147 restaurants on September 22. This included 45 new places, offering food at reasonable prices (specifically, $ 40 for two courses, plus wine or dessert). New entrees include Dumpling House in San Francisco and FolkTable in Sonoma, with an emphasis on farm-to-table cuisine.

Here are the Michelin winners from California. An asterisk indicates a new entry; the districts are designated by Michelin.
